Sweet delight for Bernie as her gazpacho is cream of the crop

The Ashdown Park Hotel has been on something of a winning streak recently.

Pastry chef Bernie Finn has been mounting up the prizes for the hotel's kitchen team with her delicate flavours.

In February, she scooped silver and bronze medals at the Catex Chef of the Year culinary competition in the RDS.

Then in May, her apricot, orange, and vanilla scones came second in all Ireland in the Goodall's Scone of the Year competition.

Most recently, her strawberry gazpacho came second in a competition in the Strawberry Fair in Enniscorthy. 'Eight hotels put forward a strawberry dish,' explained Bernie. 'We had to come up with an innovative way of including strawberries in a dish.'

Bernie said she makes every effort to use local ingredients.

The strawberries came from Greens Berry Farm in Gorey, while the tomato jelly was made with ingredients from the Redmond Farm which supplies both The Ashdown Park Hotel and The Amber Springs Hotel with much of their meat and veg requirements.

'It's been a great year for the hotel,' said Bernie, whose award winning creations can be sampled by diners at the hotel.
