Food 'triangle' is masterclass

WHEN the Faythe school was upgraded and refurbished between 2009 and 2011, much was made of the creative use of space, technology, security system and state-of-the-art classrooms, play and play equipment and rightly so.

However, there was a small 5m corner of the yard that had been left as clay and did not attract much attention.

Very quickly this 'triangle' was commandeered by Ms. Mullins and her then 3rd and 4th class who sought out the expert advice of Colm and his team from the South End Family Resource Centre (SEFRC) about 'all things green'.

Strenuous digging, planting, continuous planting, sweating and blisters followed.

It was worth it though as in 2011 the tiny triangle 'or school garden' won a Silver Merit Award in the Wexford in Bloom Competition. By 2012, the garden merited a Gold medal in the School Garden section and the plaque is proudly mounted on the wall beside the garden

Last autumn various classes planted herbs and vegetables inside.

Over Easter, planting beds were constructed by the men from the SEFRC, were placed in 'sunny corners' throughout the school and many of the tender plants moved outside. On a rota basis, the beds were weeded and watered, using rainwater from the water butt at the shelters, and such was the enthusiasm of the pupils that this regime continued over the summer.

Last week, and in spite of one of the hottest summers on record, the crops were harvested.

Colm and Ms. Mullins oversaw proceedings as pumpkins, carrots, courgettes, bean, onions and potatoes were uprooted before vegetable soup, healthy wedges, shepherd's pie, courgette muffins and pumpkin pie were cooked in the 'Sr. Marie Room' under the watchful eye of Kathleen and Mags who oversee the weekly Parents' Cookery Class. The menu for 2014 is already being planned!
